FRESH CUT SALSA

Ingredients:

1 x 987 ml can diced tomato (puree) add to bowl

1 small white onion, (diced fine) add

1 small green pepper, (diced fine) add

1/2 bunch green onion (chopped fine) add

1/2 bun cilantro (chopped fine) add

125 ml Jumpin’ Johnny's hot sauce!

 

Directions:

in a large bowl add all ingredients together and stir! tidy up the mess and enjoy with your guests!

Quqtro Fromagio Omelette with mushrooms and spinach

 Ingredients:

 2 eggs

 1/2 cup shreded cheese(cheddar, swiss,ementhaler,any cheese you like) 

  1 sliced mushroom ( I like Shiitake)

 1/4 cup spinach

dab of butter

 slash of olive oil

 sea salt & black pepper

This is my omelette recipe filling changes but method and teqnique remain, the same.

 in a small bowl crack the eggs add the milk and beat with a fork, warm your pan to medium high, preheat the oven to broil, add a dab of butter and splash of olive oil to the pan, add salt & pepper. Beat eggs, then add to the pan, stir and shake the pan, add the cheeses, then mushrooms and spinach, fire into the oven and wait 4-5 min, remove from oven fold on to plate and serve with Jumpin Johnny's on the side.....mmmmmmm delicious !

Grilled Paella

INGREDIENTS

1 doz chicken wings

2 chorizo sausages

1 dz Prawns 26/30

1 dz Mussels -in the pack of lemon butter with the scallops

1 dz Scalops

(packet-lemon garlic and butter in tinfoil)

4 portions Paella rice (recipe to follow)

lemon wedges and parsley for garnish

olive oil S&P

Jumpin’ Johnny’s Hot Sauce

saffron butter sauce to finish- small pinch of saffron 2 tbl butter add to the mussel pack at the end.

 

DIRECTIONS

1. Pre heat BBQ too 500.. then turn the centre burner off and the outside ones to low, this creates a convection style for cooking, everything!

2. In a bowl toss prawns with olive oil and a little S&P, set aside, now toss the wings in the olive oil, coat very well.

3. Place the wings and the chorizo in the centre of the grill, (5 min), turn over the wings and chorizo, add the mussels & scallop pack (in the corner) place prawns near the chicken and close the lid. (2-3 min)

4. In heat proof dish, place the Paella rice in the corner to heat up. Stir a few times. Add liquid if needed.

s. In stainless bowl, add saffron butter, olive oil and heat up to melt the butter, as the items finish cooking, add the butter sauce from the mussels, and keep warm.

6. Adjust everything on the BBQ to ensure fully cooked.

(snip the corizo with scissors into the bowl)

7. To plate place the rice in the centre of the platter. Arrange items around the rice. Gentley add the mussels to the bowl, a quick little stir, add mussels to the dish and pour the sauce on and garnish!

Grilled Hot Prawns

2 Portions

 

 

INGREDIENTS

-Prawn skewers x2

-Garlic Butter x 1/4 c

(Jumpin’ Johnny's Style recipe to follow: )

-Jumpin’ Johnny’s Hot Sauce x 2 tablespoons

 

INSTRUCTIONS

1- Melt the garlic butter, add Jumpin’ Johnny's and stir.

2-Place prawns on grill, brush with the Jumpin’ Johnny's butter mix.

3- When prawns are ready, brush again with Jumpin’ Johnny's butter mix and serve.
